Cavit (Cantina Viticoltori del Trentino in full) is a major Italian wine co-operative based in Trentino. It makes a wide variety of wines in all styles with its most popular grape variety being Pinot Grigio.
Cavit has a number of wine selections showcasing common Trentino grape varieties and styles at different price ranges, but it is arguably best known for its line of value-driven varietal Italian wines. This range is known as the Cavit Collection and is made for the US market. It includes international varieties such as Cabernet Sauvignon, Merlot, Pinot Noir and Chardonnay, as well as a popular Prosecco made in neighboring Veneto.
The co-operative was established in 1950 between grape growers in Trentino who were looking to promote their fruit and the region. In 1957, it bought its first winery, and in 1964, the central facility, Ravina di Trento, was built. Cavit now owns 10 cellars throughout the region in the districts of Valdadige, Valle dei Laghi, Vallagarina and Alto Garda, and has an association of more than 4500 grape growers. Cavit oversees each phase of winemaking, so common standards and practices are maintained between the different facilities. The co-op works in collaboration with the Edmund Mach Foundation, a wine and agricultural research institute formerly known as the Istituto Agrario di San Michele all'Adige.
Cavit also owns a 6.5-hectare (16-acre) estate on Lake Toblino. The estate is hallmarked by the Maso Toresella, a 16th century villa that appears on many of Cavit's wine labels. The villa is the source of the I Masi Trentini selection which is made jointly with the Edmund Mach Foundation.
