Ancre Hill is a relative newcomer to the United Kingdom's winemaking industry, establishing its vineyard in Monmouthshire, Wales, in 2006, and a winery in 2015. The estate is primarily focused on the production of sparkling wines including a Blanc de Noirs and a blend of Pinot Noir and Seyval Blanc, as well as a sparkling rosé made from Pinot Noir and Chardonnay. Ancre Hill's also make a range of still wines from Chardonnay and Pinot Noir, among other varieties.

The vineyard is spread across two sites located close to nearby Monmouth, with plans for a third site now underway. The 2-hectare (6-acre) Folley View site is planted to Chardonnay and Albariño, while the Town site is planted solely to Pinot Noir. The mesoclimate created by the hills encircling the vineyard is warm enough to support the growth of the vines, which are planted on sun-exposed, south-facing slopes with well-drained, limestone soils.

The winery's sparkling wines are created using the méthode traditionnelle, and all cuvées are aged on their lees for at least two years and in some cases up to five years. The wines spend an additional six months in bottle after disgorging.

Ancre Hill is dedicated to achieving high standards of organic production and achieved complete biodynamic accreditation in 2013. The vines are sprayed with a natural herbal mixture, and wild yeasts are used in fermentation. The Ancre Hill winery is predominantly constructed using natural materials and has straw bale walls and a living roof.
