The coat of arms of Cesena

Sangiovese is the star grape for the red wines, supported by Refosco, Cabernet Sauvignon, Merlot, Montepulciano and Barbera. Trebbiano takes centre stage in the white wines, complemented by Albana, Bombino Bianco and Chardonnay.

Under DOC law, the red single varietals are Sangiovese (including a riserva option) and Cabernet Sauvignon (made from a minimum 85% of that grape, with a maximum 15% of red grapes from Colli and/or authorized for the province of Forli-Cesena). The white varietals are Chardonnay (including a riserva option), Trebbiano (using a minimum 85% Trebbiano Romagnolo, with a maximum 15% of white grapes from Colli and/or authorized for the province of Forli-Cesena).

The white blends must comprise 50–60% Chardonnay and 40–50% of a selection from Bombino Bianco, Sauvignon Blanc, Trebbiano Romagnolo or Pinot Blanc. The red blends must consist of 50–60% Cabernet Sauvignon and 40–50% of a selection from Sangiovese, Merlot, Barbera or Ciliegiolo. Both blends can also gain riserva status.
