Trentino Sorni is the title used for red and white wines made under the Trentino regional DOC, specifically from vineyards around the communes of Lavis (of which Sorni is a constituent parish), Giovo and San Michele all'Adige, home to the much-respected winemaking school, the Istituto Agrario di San Michele all'Adige.

White Trentino Sorni Bianco wines are made from Muller-Thurgau, Nosiola, Sylvaner, Pinot Bianco, Pinot Grigio and Chardonnay. Its red (rosso) counterpart is based on a traditional and local mix of Teroldego, Schiava (Schiava Gentile, Schiava Grigia and Schiava Grossa are all covered) and Lagrein.

The Sorni viticultural zone occupies a privileged site on the hillsides which overlook Giovo. These typically enjoy a southerly or south-easterly aspect, meaning they make the most of the morning sun and are not directly exposed to the unforgiving heat of summer afternoons. Trentino may be surrounded by snow-capped mountains, but July afternoons here rank among the hottest on the Italian peninsula. The west-facing slopes closer to San Michele all'Adige look down onto the Adige Valley, and bear the brunt of the afternoon heat. Wines from these vineyards are noticeably richer and riper in style than those from Giovo.
